1 acorn squash

2 tablespoons olive oil

1 clove garlic, minced

¼ teaspoon cayenne pepper

¼ teaspoon black pepper

⅛ teaspoon salt

¼ cup parmesan, grated


Instructions

  1. Preheat the oven to 400°F. Rinse acorn squash, halve, remove seeds, and cut into slices about 1” thick.
  2. Combine oil, garlic, cayenne pepper, black pepper, and salt. Toss sliced squash in oil mixture and spread coated squash into an even layer on a rimmed baking sheet.
  3. Bake 40-55 minutes or until squash is tender and browned. For the darkest color, do not flip or stir squash while baking.
  4. Sprinkle roasted squash with parmesan. Enjoy warm!
