15 Minute Onion-y Lentils

Serves: 3


Ingredients:

1 tablespoon olive oil or other vegetable oil

½ large yellow onion, thinly sliced

⅛ teaspoon ground black pepper

¼ teaspoon ground mustard

⅛ teaspoon cayenne pepper

1 tablespoon brown sugar

1 tablespoon Worcestershire sauce

1 tablespoon tomato paste

1 tablespoon apple cider vinegar

½ cup water

1 14oz can lentils, drained and rinsed


Directions:

Heat oil in a medium skillet over medium heat.

Add remaining ingredients, except lentils and water, and stir to coat.

Add water and cook until water has evaporated and onions have softened, ~10 minutes.

Stir in drained lentils and cook until heated through.
