Berry Baked Oats

Ingredients


2 ¾ cups rolled oats

½ cup ground flax seeds

¼ cup maple syrup*

½ cup mashed banana (1 ripe banana)

2 eggs

1 ½ cups milk of choice

¼ cup oil

1 teaspoon baking powder

¼ teaspoon salt

1 ½ teaspoons cinnamon

1 teaspoon vanilla extract

1 ½ cups frozen berries

 

Instructions



  1. Preheat the oven to 375℉. Spray a 9×9-inch baking dish with nonstick cooking spray.
  2. In a large bowl combine the mashed banana, eggs, syrup, oil, and milk. Stir in oats, flax, cinnamon, salt, baking powder, and vanilla extract. Quickly and gently fold in frozen berries.
  3. Transfer batter to the prepared 9×9-inch dish. Top with a few additional frozen berries, if desired.
  4. Bake for 30 minutes or until the center is just set. For a more firm, bar-like, oatmeal bake, bake for 33-35 minutes.
  5. Let set for 5 minutes before serving.

 

*I used maple syrup because I like the flavor. Granulated sugar, brown sugar, honey, or another sweetener would work well too.
