Summer Squash with Feta and Basil

INGREDIENTS

  • 4 small summer squash or zucchini, halved lengthwise and cut into thin half-moons
  • 1 clove garlic, minced
  • 2 tablespoons olive oil
  • Salt and Pepper, to taste
  • 2 tablespoons cup basil, chopped
  • ¼ cup feta
  • ¼ cup walnuts, or other chopped nuts

DIRECTIONS

  1. Combine squash, garlic, and olive oil in a large skillet over medium-high heat. Season with salt and pepper as desired.
  2. Cook, stirring occasionally, 10-12 minutes or until squash is fork-tender.
  3. Stir in basil and remove from heat.
  4. Sprinkle with feta and walnuts.
  5. Enjoy!
