Grilled Salmon w/Avocado Garlic Sauce

Ingredients


For the salmon:


4 4-ounce salmon filets, boneless


Salt and pepper


Non-stick pan spray


For the sauce:


1 medium avocado, halved and pit removed


2 tablespoons olive oil


½ lemon, juiced (about 2 tablespoons)


1 teaspoon mustard


2 garlic cloves, minced


¼ teaspoon salt


⅛ teaspoon pepper




Directions


  1. Heat grill to high temperature. Lightly spray a sheet of aluminum foil with non-stick pan spray.
  2. Place salmon on foil and season lightly with salt and pepper. Place salmon and foil on the grill and cook until salmon reaches an internal temperature of 145°F, about 8-12 minutes.
  3. In a food processor or blender combine sauce ingredients. Process until smooth.
  4. Serve salmon with avocado garlic sauce; enjoy!



Notes: If you prefer a thinner sauce, you can add a splash of water or more olive oil. I recommend mincing the garlic before adding it to the food processor or blender to prevent any large pieces of garlic from remaining. Salmon can also be prepared in an air fryer or baked.
