SALAD:


10 oz shredded carrots

¼ cup finely chopped green onions

2 tbsp chopped fresh cilantro

1 ½ tbsp sesame seeds, sunflower seeds, or a combination

DRESSING:

3 tbsp rice vinegar

2 tbsp sesame oil

1 ½ tbsp low sodium soy sauce or liquid aminos

1/2 tsp red pepper flakes

1 tsp sugar

1 tsp garlic, minced (or 1/2 tsp garlic powder)

1/4 tsp ground ginger


Directions

1. Combine all dressing ingredients in a small bowl.

2. Toss carrots with dressing and green onions.

3. Garnish with cilantro and sesame seeds.


Serves: 4
