 Serves: 8 

Ingredients

1 onion, chopped

2 strips bacon

2 each eggs

1 cup pineapple, chopped

4 cups white rice, cooked

2 Tbsp soy sauce

⅛ tsp black pepper


Instructions:

  1. Cook bacon in a medium saucepan. Remove bacon and tear into small pieces, but reserve rendered fat.
  2. Add onion to bacon fat and sauté. Add eggs and cook, stirring regularly until eggs are cooked.
  3. Add pineapple, bacon, and rice; stir together. Stir in soy sauce and pepper.
