 Serves: 4 

Ingredients:

1 lb baby carrots

⅓ cup water

1 Tbsp butter

1 Tbsp honey

½ tsp thyme

½ tsp fresh lemon juice

Instructions:

  1. First, place a trivet in your Instapot and add carrots and water. Pressure cook for 4 minutes.
  2. Drain water and set cooked carrots aside. Remove trivet.
  3. Switch to sauté mode. Add butter, honey, and thyme and sauté for about 30 seconds.
  4. Return carrots to Instapot and stir to coat carrots in butter mixture.
  5. Sprinkle with freshly squeezed lemon juice.
